Thai Prawns with Coconut & Lime

Thai prawns with coconut and lime - this is one of the great recipes on The man Challenge. High in protein, tastes great and takes a few minutes to make!

1 Tablespoon red curry paste
2 Tablespoons reduced - fat coconut milk
2 Teaspoons lime juice
300g peeled green prawns - tails on
1 Cup cooked Basmati rice
Lime wedge to serve

1. Mix the curry paste, coconut milk and lime juice in a glass
2. Add prawns and mix.
3. leave soaking in marinade for 10 minutes
4. heat frypan and spray with olive oil
5. once hot throw prawns and marinade in and stirfry for approx 3 minutes or until prawns have changed colour
6. serve with cooked rice and lime wedge

ADAMS TIP: have with salad (lettuce, tomato, onion, cucumber, red capsicum)
